Peanut Butter Banana Pancakes + Sausage Frittata

Weekend brunches are a tradition in our family, and I love experimenting with different flavors and varieties of our go to brunch – pancakes, eggs, and either sausage or bacon. I’ve been recently making peanut butter banana pancakes and they are SO FRIGGIN’ GOOD, so I’m sharing (for the first time in a VERY long time) a recipe on the blog! Sausage Frittata Recipe

Serves 4

Ingredients

  • 4 sausages
  • 6 eggs
  • 2 small bell peppers or 1 medium pepper
  • 2 tomatoes
  • 1/2 cup chopped onion or scallion
  • spices: salt, pepper, garlic powder, cayenne, paprika, dried Italian herbs (rosemary, oregano, etc)
  • oil

Steps

  1. Preheat oven to 390 Fahrenheit/200 Celsius
  2. Heat oil in an oven safe pan – I like to use this cast iron skillet
  3. Chop sausages into bite sized pieces
  4. Once oil is warmed, brown sausages in pan for a few minutes until mostly cooked
  5. Add peppers, onions, salt and pepper, then sauté for a few minutes until sausage is fully cooked
  6. Add tomatoes and sauté until combined
  7. Beat eggs, season with spices
  8. Pour egg mixture into pan, spread vegetables & sausage until even
  9. Bake for 10-15 minutes or until golden brown

Peanut Butter Banana Pancakes Recipe

Adapted from AllRecipes.com; makes 6 fluffy pancakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 2 tablespoons butter, melted
  • 1/4 cup peanut butter
  • 1/2 cup bananas, mashed

Steps

  1. Sift dry ingredients together in a large bowl (very important! Don’t just mix them together without sifting – it comes out differently)
  2. Add milk, egg, melted butter, peanut butter, and banana; stir until combined.
  3. Cook pancakes on greased pan or griddle
  4. Optional: mix extra peanut butter with syrup to make peanut butter syrup
  5. Enjoy!!
